Mouton’s Dirty Rice, Mouton’s Pork and Beans, Mouton’s Boiled Shrimp

Mouton’s Dirty Rice

  • 2 medium yellow onions, diced
  • 1 head of garlic, minced
  • 1 stick butter
  • 2 bunches green onions, chopped
  • 1 1/2 lbs. ground sirloin
  • 1 lb. ground pork
  • 1/2 lb. chicken livers (chopped fine)
  • 2 cups uncooked white rice
  • 4 cups chicken broth
  • 1/4 cup parsley
  • Salt and pepper to taste

Saute sirloin and pork in a pan breaking into small pieces. Cook until meat is done and drain fat. In a separate pan, melt butter and sauté chicken livers, garlic, onion, and green onion. When onions are limp, pour entire contents into a large pot and add cooked meat. Add uncooked rice and parsley and mix well. Pour enough chicken broth to cover entire mixture. Reduce heat, cover and cook until all the liquid is absorbed, approximately 40 minutes.

Mouton’s Pork and Beans

  • 6 – 1 lb. cans pork and beans, drained and fat piece removed
  • 2 lbs. bacon, cut into 1” pieces
  • 1/2 lb. brown sugar
  • 1 large yellow onion, diced
  • 1/2 stick butter
  • 1 – 18 oz. bottle barbeque sauce
  • 2 Tbsp. molasses
  • 3 Tbsp. honey

Cook bacon pieces until crisp. Cook onion in butter until limp. In a large pot, mix all ingredients and bring slowly to a boil, stirring frequently (it will stick). Let boil for no more than a few minutes. Serve.

Mouton’s Boiled Shrimp

  • 3 lbs. shrimp, heads removed
  • 2 lbs. small red new potatoes
  • 2 whole heads of garlic
  • 3 stalks celery, chopped into large pieces
  • 1 yellow onion, chopped into large pieces
  • 5 green onions, chopped into large pieces
  • 1 box crab boil
  • 1 small bottle liquid crab boil
  • Salt and cayenne pepper to taste

Fill large pot half full of water. On high heat, add all ingredients, except shrimp. Bring to a boil, reduce heat to medium and let cook for 45 minutes. Add shrimp. Turn heat back to high and cook for 5 minutes. Remove pot from heat and let set for about 10 minutes. Drain, discard everything except shrimp, potatoes, and garlic.

Cocktail Sauce:

  • Ketchup
  • Worcestershire sauce
  • Horseradish
  • Lemon juice

Mix all ingredients and serve with shrimp.
