Using a mallet, lightly pound 1 chicken breast without tearing the skin. Place on a plate with citron marinade and sprinkle with salt and pepper. Let marinate in refrigerator for one hour. Wrap the citron chicken breast around 2 fresh stalks of asparagus and 1-2 slices of roasted red bell pepper. Bake in oven at 350 degrees for 15-20 minutes. Let chicken cool. Top chicken with your choice of either fruit salsa or remoulade sauce. Slice chicken and serve.
