12 Madrool dates, seeded
2 oz. goat cheese
1 cup almonds, toasted with 1 tsp. chipotle powder
6 strips apple wood smoked bacon (cut in half and par cook)
12 bamboo skewers (4”)

Seed dates by cutting lengthwise, just deep enough to reach the seed. With the date split open, place one whole almond in the center and use a teaspoon to fill the remainder of the opening with goat cheese. Use half strips of par-cooked bacon to wrap stuffed dates and hold together individually on skewers. Place on a baking sheet and warm in a 385 degree oven for 3-5 minutes. Serve warm
