BALSAMIC VANILLA WHITE NECTARINES WITH ICE CREAM AND TOASTED ALMONDS

1 cup almonds
4 nectarines
2 Tbsp. butter, unsalted
¼ cup balsamic vinegar
¼ cup sugar
1 tsp. vanilla extract
Vanilla Bean ice cream

Place 1 cup almonds in oven for 10 minutes to toast. Roughly chop when cooled. Cut the nectarines into slices and leave skin on. Saute in butter and then add balsamic vinegar, sugar and vanilla extract. Let thicken and sugar get incorporated. Once warm, spoon mixture over vanilla beach ice cream and top with toasted almonds. Serves 4
