BEER BISCUITS WITH BLACKBERRIES AND DEVONSHIRE CREAM

Recipe: BEER BISCUITS WITH BLACKBERRIES AND DEVONSHIRE CREAM

Ingredients

  • ½ lb. butter, room temperature
  • 6 oz. beer
  • 2 cups flour
  • 2 Tbsp. baking powder
  • 1 egg
  • 2/3 cup buttermilk
  • 2 Tbsp. sugar
  • 1 tsp. salt
  • Brown sugar
  • 1 pt. blackberries
  • 1 Tbsp. sugar
  • 1 jigger Brandy
  • 1 cup cream cheese
  • ¾ cup cream
  • ½ cup powdered sugar
  • 1 tsp. vanilla

Instructions

  • For biscuits, sift all dry ingredients and mix in the butter (should look mealy when
  • mixed.) Add egg, beer and buttermilk and mix until dough forms (don’t overmix.)
  • Drop onto parchment covered pan. Top with sprinkling of brown sugar and bake
  • for 10-12 minutes at 350 degrees. Allow to cool. In a bowl, combine blackberries,
  • sugar and brandy. To make Devonshire Cream, combine cream cheese, cream,
  • powdered sugar and vanilla in a food processor. Slice the top off each beer biscuit
  • and fill with blackberries and Devonshire Cream. Crown with top of biscuit and
  • serve.
