Toast bread with butter. Rub a little olive oil or butter over fish, then apply blackening seasoning to your taste. Grill fish in a skillet until done. Top with Mango Salsa.

Mango Salsa:
Diced fresh pineapple and mango
Minced garlic and shallots
Salt and pepper to taste
Cilantro
Extra virgin olive oil

Mix ingredients together.
