Recipe: CHICKEN AND CHORIZO TACOS

Ingredients

  • Cilantro Lime Sour Cream
  • 1 cup sour cream
  • Juice of 1 lime
  • 1 cup chopped cilantro, stems removed
  • Salt and pepper to taste
  • Whisk all ingredients together. Add small amount of milk to create a dressing.
  • 2 chicken breasts (6 oz. each), cubed
  • 3 tubes Chorizo sausages, removed from casings
  • 8-10 corn or flour tortillas (6 inch)

Instructions

  • To make tacos, saute meats together over medium gas heat. Heat tortillas in oven or over a gas grill. Stuff taco shells with meat mixture and add fresh spring mix and roasted grape tomatoes (place tomatoes cut in half with olive oil, salt and pepper in oven at 350 degrees for 15 minutes.) Top with cilantro lime sour cream. Serves 4
