THE GRILL AT SCENIC HILLS

1 chicken breast (8 oz.)
2 fresh basil leaves
1 oz. Swiss cheese
1 oz. smoked ham
2 strips smoked bacon
Seasoned flour
Egg wash
Panko breadcrumbs

Pound chicken breast with tenderizer. Place bacon, ham, basil and Swiss cheese on top part of breast. Roll tightly and secure with toothpicks. Roll lightly in seasoned flour, dip in egg wash, and roll in seasoned Panko breadcrumbs. Bake in oven at 400 degrees until internal temperature reaches 165F.

Gouda Cream:
6 oz. shredded smoked Gouda cheese
10 oz. heavy cream
1 Tbsp. each of butter and flour

Combine flour and butter on low heat until roux forms. Add heavy cream and whisk until incorporated. When cream starts to bubble, add shredded Gouda cheese. Season with salt and pepper.
