Recipe: CHICKEN MARSALA

Ingredients

  • Chicken breast, butterflied or pounded thin
  • Eggwash with eggs and buttermilk
  • Panko breadcrumbs
  • Flour
  • Olive oil
  • Sliced mushrooms
  • Diced garlic and shallots
  • Salt, pepper, & thyme
  • Marsala wine
  • Heavy cream
  • Cooked pasta

Instructions

  1. Cover the chicken with flour then dip in eggwash. Dip into breadcrumbs. Pan sear chicken breast with olive oil until done. If chicken is thick, finish in oven. Saute mushrooms in pan with olive oil. Add a pinch of diced garlic and shallots. Add salt, pepper and thyme. Deglaze with marsala wine and add heavy cream – allow to reduce and thicken. Serve over a bed of cooked pasta.
