Recipe: CHOCOLATE STOUT GLAZED LAMB CHOPS OVER FIELD MIX WITH STRAWBERRY BASIL VINAIGRETTE

Ingredients

  • 2 cups chocolate stout
  • 1/2 cup brown sugar
  • Salt and pepper to taste
  • 16 lamb chops
  • 8 cups field mix
  • 1/2 cup basil olive oil
  • 1/2 cup strawberry balsamic vinegar
  • 1 Tbsp. coriander seeds, crushed

Instructions

  1. Bring stout, sugar, coriander to a boil until syrupy. Pat lamb chops dry. Season with salt and pepper. Pan sear lamb chops in 2 Tbsp. basil olive oil for 4 minutes on each side. Add reduced stout to pan and simmer for 5 minutes. Add balsamic to bowl and whisk slowly adding basil olive oil for one minute. Toss greens in vinaigrette and top with glazed lamb chops. Serves 8
