CHRISOULA’S KEY LIME CHEESECAKE

Crust:
1 ½ cups graham cracker crumbs
3 Tbsp. sugar
1/3 cup butter, melted

Mix graham cracker crumbs and sugar, then add butter. Press into a 9 inch springform pan.

Filling:
4 (8 oz.) packages cream cheese, softened
1 cup sugar
1 tsp. vanilla
4 eggs
1 Tbsp. Key lime or lime zest
4 oz. Key lime or lime juice

Beat cream cheese, sugar, vanilla and then the eggs (slowly with mixer until well-blended. Add key lime or lime zest and juice, then blend with a spatula and pour over crust. Bake one hour in 300 degree pre-heated oven for about one hour or until center is almost set. Let cool about two hours and refrigerate at least four hours.

Topping:
3 Tbsp. sour cream
1 Tbsp. powdered sugar
Key lime wedges or lime zest for garnish

When cheesecake is chilled, combine powdered sugar and sour cream. Spread over the center of cheesecake and garnish with lime wedges or lime zest. Use a hot knife for cutting. Can be frozen, preferably in a sealed container.
