CRAB CLAWS WITH WILTED ARGULA

Wilted Arugula:
4 cups arugula
¼ minced red onion
1 Tbsp. minced garlic
Salt and pepper to taste
1 Tbsp. butter

On medium-high gas heat, add butter, onion, garlic and arugula to a sauté pan. Stir until wilted.

Crab Claws:
½ lb. crab claws
1 Tbsp. each of parsley, chives, thyme and garlic
10 oz. dark lager (Pensacola Bay Ridtide)

Combine crab claws, herbs and beer. Let marinate for 3 hours. Saute with butter on medium gas heat until crab is tender. Serve over wilted arugula.
