½ lb. crawfish tails
1 sheet puff pastry
½ cup sriracha sauce
½ cup cream cheese
2 egg yolks

Using a pizza cutter, cut sheet of puff pastry into 3” squares. Place about 4-5 tails in the center of each square. Then add a pinch of cream cheese and some of the sriracha (to taste.) Take the four corners of the square and pinch them together. Place your purses on a greased sheet pan and brush on the egg wash. (Egg wash is made by whisking the egg yolks together and adding a Tbsp. of water. Bake the purses in a 375 degree oven for 5-7 minutes or until the pastry is golden brown.
