CREAMY GREEN CHILI AND TORTILLA SOUP

THE GRAND MARLIN

1 Tbsp. butter
1 small onion, diced
1 Tbsp. garlic cloves
1 cup green peppers, deseeded and chopped
1 jalapeno, deseeded and chopped
1 green tomato, core removed and quartered
½ lb. corn tortillas, cut into quarters
1 ½  qts. chicken stock
1 tsp. dried oregano
½ cup heavy cream
1 small bunch cilantro, chopped
Salt and pepper to taste
1 small roasted chicken, meat picked from bone

 

Sweat first 6 ingredients until tender over low gas heat. Add the tortillas, chicken stock, and oregano and bring to a boil. Simmer until tender. Add the cream and cilantro and bring back to a boil. Puree ingredients. Season with salt and pepper. Add the chicken meat. Garnish with tortilla strips, sour cream, and pico de galo.

Makes 2 ½ qts.
