CUCUMBER SALAD WITH SWEET AND SOUR DRESSING

Sweet and Sour Dressing:
Combine 6 oz. water, 1 tsp. sugar, 6 oz. vinegar and a pinch of salt. Taste and adjust ingredients to achieve the tart taste of lemonade.

Cucumber Salad:
½ tsp. salt, divided
1 lb. cucumbers
½ small onion, thinly sliced
8 oz. tomatoes, sliced
½ bell pepper, thinly sliced

Peel the cucumbers and thinly slice. Salt lightly and let sit for 30 minutes. Squeeze out the excess liquid. Combine with thinly sliced onion, bell peppers, and tomatoes (may use cherry or grape tomatoes.) Add sweet and sour dressing and chill.
