1 ½ lbs. skirt steak
1 pkg. Fajita seasoning mix
1 green pepper, julienned
1 red pepper, julienned
1 yellow pepper, julienned
1 Spanish red onion, julienned
2 Tbsp. oil
1 cup cilantro (for garnish)
1 pkg. flour tortillas

Cut skirt steak into ¼” strips and place in a bowl with the fajita marinade. Refrigerate for at least 30 minutes. In a frying pan, use 1 Tbsp. oil to cook the meat for 3-5 minutes depending on desired doneness. Add peppers and onions and cook until tender. Wrap meat and vegetables in tortillas and add cilantro to taste.
