1 Naan bread

4 oz. Pancetta, medium diced, cooked

¼ cup red onion, sliced

¼ cup marinara sauce

1/3 cup shredded mozzarella

1 cup spinach leaves, stems removed

1 Tbsp. extra virgin olive oil

 

In a sauté pan, cook pancetta and render fat. Remove from heat and strain. Preheat oven to 400 degrees. Place Naan bread on a flat pan. Top with marinara sauce. Add spinach leaves and cheese. Top with onion slices and pancetta. Drizzle olive oil all over and cook until brown. Remove, cut into six slices.
