GRILLED SALMON WITH TROPICAL SALSA

2 lb. salmon filet
Diced red onion
Chopped fruit (mango, pineapple, papaya)
1 Tbsp. red wine vinegar
½ cup chopped cilantro
½ cup orange marmalade
Salt and pepper to taste
Lemon juice

Season salmon with salt, pepper, and lemon juice on both sides. Heat grill on medium gas heat. Grill salmon on both sides. Quarter turn on each side until desired doneness, medium to medium well. For salsa, in a bowl, combine chpped fruit, diced red onion, cilantro, pinch of salt and pepper, red wine vinegar and ½ cup orange marmalade. Gently incorporate ingredients. Serve salsa over top of grilled salmon. Serves 6-8
