2 lb. grouper filet
8 oz. Roma tomatoes, diced
3 basil leaves, rolled up and sliced
5 oz. fresh feta cheese
1 Tbsp. olive oil
1 tsp. red wine vinegar or Italian salad dressing
1 tsp. salt and pepper

Heat oven to 350 degrees. Place filets of grouper on a sheet pan and add a splash of olive oil and salt and pepper. Chop tomatoes and mix with feta, chopped basil and place in a bowl. Sprinkle top with a little salt and pepper and mix. Top the grouper with the mixture and place in oven for 12-15 minutes.
