LION FISH TOMATO AND FETA

8 oz. lion fish
Salt and pepper
2 Tbsp. olive oil
2 oz. tomatoes (chopped)
1 Tbsp. fresh basil (chopped)

Heat oil in a sauté pan. Preheat over to 350 degrees. Dredge the filets in the flour then sauté on one side for 3 minutes then turn and top with the tomato feta and basil mixture. Finish in oven for 8 minutes.
