Recipe: MARGARITA SHRIMP TACOS

Cilantro Vinaigrette:

1/3 cup white vinegar

Juice of ½ lime

1 cup chopped cilantro, stems removed

Salt and pepper to taste

2/3 cup olive oil

Combine all ingredients, except olive oil in a bowl or food processor. Slowly add olive oil with whisk.

 

Cheese Sauce:

8 oz. white American block cheese

2 Tbsp. chopped green chiles, processed

1 cup whole milk

 

Whisk all ingredients over low gas heat until combined.

  

8 large shrimp, peeled and deveined, tail removed

3 cups tortilla chips

Instructions

  • Saute shrimp in olive oil, salt and pepper. Combine shrimp and cilantro vinaigrette.
  • Place tortilla chips on a baking sheet. Top with shrimp coated with vinaigrette. Top with melted cheese and bake in oven for 10 minutes at 350 degrees. Once removed, dice a half avocado, fresh chopped cilantro and diced Roma tomatoes. Serves 1
