MOLTEN SPICED CHOCOLATE

4 oz. semi-sweet chocolate
½ cup butter (1 stick)
1 Tbsp. Cabernet Sauvignon wine
1 tsp. vanilla extract
1 cup confectioners sugar
2 eggs and 1 yolk beaten together
6 Tbsp. flour
¼ tsp. cinnamon
¼ tsp. ground ginger
1/8 tsp. ground cloves

In a microwave, heat a bowl with chocolate and butter for one minute or until butter melts. Stir until chocolate is completely melted. Add wine, vanilla and sugar; blend well. Stir in eggs. Stir in flour and spices. Pour batter into 4 (6 oz.) buttered soufflé ramekins. Place on baking sheet. Bake in a 425 degree preheated gas oven for 13-15 minutes or until sides are firm and center is soft. Remove and let stand 1-2 minutes. Carefully loosen edges with a knife. Invert onto a plate and sprinkle additional confectioner’s sugar. Garnish with mint sprig. Serve immediately.
