MOSAKAH, TABOULI, AND HUMMUS

Moussaka and Hummus

MOSAKAH

3 potatoes, peeled and diced
2 eggplant, peeled and diced
½ lb. ground beef
1 Tbsp. minced garlic
½-1 cup tomato puree
½ Tbsp. black pepper
1 Tbsp. salt
1 Tbsp. chicken bouillon
1 tomato, diced
1 ½ cup water

Fry the diced potatoes and eggplant until golden brown. In another pot, brown ground beef and add the diced tomatoes and garlic; add tomato puree. Add water and bring to a boil, then add fried eggplant and potatoes. Simmer on low for 10 minutes. Serve with basmati rice on the side.

TABOULI

2 bunches finely chopped parsley, washed and strained
2 diced tomatoes
3 Tbsp. cracked wheat
¼ cup lemon juice
1 Tbsp. salt
3 Tbsp. olive oil
1 ½ Tbsp. dried, crushed mint
Mix all ingredients in a mixing bowl.

HUMMUS 

2 – 15 oz. cans chickpeas
3 tsp. tahini (ground sesame seeds)
½ Tbsp. salt
3 Tbsp. lemon juice
½ Tbsp. minced garlic

Combine all ingredients in a food processor until smooth. Taste and add more of any of the ingredients for desired taste.
