NOLA Eggs Benedict with Chipotle Hollandaise

Ingredients

  • 1 cup organic yellow stone-ground grits
  • 24 oz. boiling water
  • 4 oz. heavy cream
  • 3 oz. peeled and deveined shrimp (41-50 ct.)
  • 1 Andouille sausage link, diced
  • 1 oz. red peppers, small diced
  • 1 oz. green peppers, small diced
  • 1 oz. red onions, small diced
  • 2 oz. butter
  • 2 oz. Boursin cheese, crumbled
  • 1 tsp. Old Bay seasoning
  • 2 Tbsp. fresh thyme
  • 1 oz. olive oil
  • Salt and pepper to taste
  • 4 oz. seasoned flour
  • Oil for frying

Instructions

  1. In a medium saucepan over medium-high heat, add the oil to coat the bottom of the pan. Add peppers, onions, sausage and cook for 3 minutes. Add shrimp to the pan and cook for an additional minute. Add salt, pepper, Old Bay and stir with spatula for about one minute. Add boiling water and stir. To the boiling mixture, add grits and whisk for 4-5 minutes. Add cream and thyme to the grits, whisk gently for 2-3 minutes. Finish with butter and let stand with heat turned off for 5 minutes. Place grits in a 8×8 pan, either glass or metal and spread mixture evenly. Place in a cooler to set up for 3-4 hours. Once grits are solid, turn out on cutting board and cut into desired shapes. You will need four pieces. In a sauté pan, heat 1” of oil to 325 degrees. Dredge grit cake in seasoned flour and carefully add to pan. Cook for 3-4 minutes on each side. Drain on paper towel and hold in a warm place.

Ingredients

  • 6 oz. melted butter (hot)
  • 6 large egg yolks
  • Pinch of salt
  • Pinch of cayenne pepper
  • ½ tsp. of pureed chipotle peppers

Instructions

  1. In a blender on medium speed, add egg yolks for 10 seconds. Turn blender back on and drizzle in hot melted butter until thick and creamy. Turn blender to low and add rest of ingredients and hold in warm area.
