SHUX OYSTER BAR

Shuck fresh oysters and loosen oyster from shell

Topping:
2 cups heavy cream
1 Tbsp. minced garlic
1 tsp. chicken base
½ lb. fresh spinach
¼ cup bacon, chopped
¼ cup green onion, thinly sliced
2 ½ cups crushed crackers
¼ cup parmesan cheese
1 Tbsp. chopped parsley
Pinch of cayenne pepper
1 tsp. coarse ground black pepper

Add heavy cream, garlic, and chicken base to a saucepan. Cook until ¼ reduced on low heat. When reduced, add spinach and wilt. After wilting, cool mixture then add last seven ingredients and mix well. Cover oysters with enough topping to cover the oyster. Broil for two minutes.
