PAN-ROASTED CHICKEN WITH TOMATO BASIL RELISH

 

1 chicken breast

1 tomato, coarsely chopped

2 fresh basil leaves

1 shallot, julienned

3 parts oil to 1 part vinegar

Salt and pepper to taste

 

Heat sauté pan to medium high heat with a small amount of oil. Season chicken with salt and pepper. Place chicken in pan and cook until brown.  Finish in preheated 350 degree oven and cook until proper temperature. While chicken cooks, slice tomato, shallot and basil. Mix in bowl with oil and vinegar, salt and pepper. Serve with chicken.
