TUNA DELUNA

Saute shrimp in sherry and garlic on low heat until almost done. Add cream and continue to cook until cream thickens. Prepare tuna steaks in one of three different methods:
Blackened: dust tuna steak in Cajun spices and sear in cast iron pan until desired doneness.
Sauteed: Sprinkle tuna steaks with herb seasoning and place in lightly buttered pan and cook to desired doneness.
Grilled: Dredge in Italian dressing and grill on both sides to desired doneness.

Plate tuna and top with shrimp mixture on each fish. Garnish with onion and lemon wedge.
