JERRY’S EGGS AND ANDOUILLE SCRAMBLE
Heat skillet to about medium temperature. Add butter making sure not to burn, then add the andouille. Saute for 5-8 minutes until cooked. Sprinkle a few green onions, and reduce heat. In a bowl, add eggs, half and half, Tabasco. Whish until eggs are blended well with other ingredients. Once the skillet has been cooled down
Add eggs into skilled with andouille. Let the eggs cook a bit before stirring, but be careful not to let the eggs stick to the bottom. Sprinkle with cheese on top of eggs and then flip eggs to one side of skillet and reduce heat to low. Sprinkle a few chopped green onions and cheese on top for garnish. Serve with grits, potatoes, Cajun toast and fresh fruit.
