Skopelo's on the Bay - Gus Silivos
KATAIFI
Mix nuts with cinnamon. Carefully spread out phyllo dough, disentangle and divide into thick strips about 6-8 inches long. Place some nut mixture at one end of strip and roll up carefully. Place roll with “seam” downward in bottom of pre-greased pan with butter. Repeat until mixture is used. Drizzle melted butter and moisten each roll. Bake in preheated 350 degree oven for 40-50 minutes until golden brown. To make syrup, combine water, sugar, honey and cloves. Bring to a boil, skim broth. Add lemon juice, remove and cool. Remove kataifi from oven, top with cool syrup and allow to sit overnight.
