PESCE AL CARTOCCIO – (FISH IN PARCHMENT)

1 fish filet (firm white fish preferred)
1 ½ cups zucchini (julienne)
1 ½ cups squash (julienne)
½ cup red onion (julienne)
½ cup fennel (julienne)
½ cup white wine
¼ cup lemon juice
4 Tbsp. butter (cubed)
Salt and pepper to taste
Fresh herbs

Place parchment paper (enough to seal ingredients. Combine all vegetables, herbs, salt and pepper and place on parchment paper. Lay butter on top. Add white wine and lemon juice. Place fish on top. Seal parchment paper tightly. Bake at 425 degrees for about 12 minutes for a medium-sized fish.
