PORK CHOPS WITH MARINATED TOMATO SALAD

2 pork chops (5 oz. each)

6 cherry or grape tomatoes, cut in half

1 Tbsp. extra virgin olive oil

1 tsp. basil, julienned

1 Tbsp. scallions, chopped

1 tsp. parsley, coarsely chopped

Salt and pepper to taste

Olive oil for cooking

 

Place tomatoes, extra virgin olive oil, basil, scallions, and parsley in a bowl. Season with  salt and pepper. Place in refrigerator for 1-2 hours to marinate. Season pork chops in a preheated sauté pan. Add olive oil and cook chops on both sides until done. Place on plates and top with tomato salad.
