PORTUGESE STRAWBERRIES OVER ICE CREAM

THE WINE BAR ON PALAFOX

3 pints strawberries, hulled and sliced
¼ cup sugar
¼ cup ruby port (or any port of your choice)
2 pints vanilla bean ice cream

In a medium saucepan, incorporate all ingredients except for the ice cream and bring to a gentle simmer. Remove from heat and place in a non-reactive bowl, toss gently and refrigerate for 2-3 hours, tossing occasionally. Separate ice cream into 4 small bowls, drizzle with strawberry mixture and enjoy.
