4 cups pumpkin, peeled, seeded and small diced
2 cups apples, peeled, seeded and small diced
½ cup onion, small diced
1 tsp. chopped garlic
½ cup chopped celery, small diced
½ cup carrots, small diced
¼ tsp. allspice
¼ cup brown sugar
1 cup heavy cream
1 gallon water
4 oz. butter
Salt and pepper to taste

Melt butter in a large pot. Saute onions, celery, carrots and then add garlic. Add pumpkin and apples and sauté together. Add allspice and then brown sugar. Add water and cook until half reduced. Remove and puree with immersion blender. Add heavy cream. Season with salt and pepper.
