QUINOA SALAD WITH FLORIDA STRAWBERRIES AND CITRUS VINAIGRETTE

THE GRAND MARLIN

Salad:
1 cup quinoa, cooked
2 cups arugula
6 dried apricots, julienned
1 grilled red onion
6 strawberries, sliced
½ cup almonds, sliced, toasted
4 oz. citrus vinaigrette
Salt and pepper to taste

Toss all ingredients together. Adjust seasoning with salt and pepper.

Citrus Vinaigrette:
6 oranges
4 lemons
4 limes
2 cups fresh orange juice
4 cups extra virgin olive oil
1 cup red wine vinegar
Salt and pepper
¾ cup sugar

Zest the citrus and squeeze the juice. Mix ingredients.
