RED EYE GRAVY AND BLACKENED DRUM

1 cup house bacon
1 cup strong coffee
1 cup diced onion
5 cloves garlic
5 oz. black drum (1 ½” thick)
2 oz. fresh ground pepper and salt
1 slice heirloom tomato

Carmelize bacon in a little olive oil for 3 minutes. Add onions and garlic. Sweat until tender. Add coffee and let cook for an additional 3 minutes. Coat drum in peppercorn crust and sear in hot olive oil. Flip after 2 minutes and add a tablespoon of butter. Cook an additional 3 minutes and remove from heat to rest.
