Recipe: ROASTED GARLIC SOUP

Ingredients

  • 1 cup garlic
  • 2 cups bread
  • ½ onion, chopped
  • 1 ½ qt. stock
  • Salt and pepper to taste
  • 1 cup cream + 2 cups milk
  • Olive oil
  • Chives for garnish

Instructions

  • Heat oil, whole garlic cloves and onion over medium gas heat in a heavy pot. When
  • garlic is soft, add stock, milk and cream. Bring to a simmer and add bread torn in
  • pieces. Blend with hand-blender and season. Garnish with chopped chives.
