MACKEY’S MUDHOUSE AND GRILLE

Cake:
2 cups unbleached all-purpose flour
1 ½ cup sugar
½ cup unsalted butter, softened
½ cup pastry cream filling mix or instant vanilla pudding mix, dry
2 tsp. baking powder
1 tsp. salt
½ cup vegetable oil
½ cup milk
4 large eggs
½ cup rum
2 tsp. vanilla
¼ tsp. butter rum flavor
¼ cup pecan flour, for dusting baking pan

Mix all ingredients for 4 minutes. Bake for 1 hour at 325 degrees.

Glaze:
½ cup unsalted butter
¼ cup water
1 cup sugar
½ cup rum
½ tsp. vanilla

Bring ingredients to a boil for 3 minutes. Poke holes in cake and drizzle glaze over cake.
