SAUTEED SHRIMP WITH CHORIZO AND OLIVES

 

Large shrimp, peeled and deveined

Onion, julienned

Large Spanish olives, cut in half

Spanish chorizo, cut into medium pieces

1 tsp. dried oregano

1  tsp. paprika

2 Tbsp. sherry vinegar

Fresh parsley

Cooking oil

 

Heat oil in a sauté pan. Add chorizo and onion and sauté. Add shrimp and dry ingredients. Finish with sherry vinegar. Serve over pasta, rice or crostini.
