5-6 oz. scamp filet
½ cup flour
2 oz. white wine
¼ tsp. lemon juice
1 oz. butter
Chopped parsley for garnish
Salt and pepper to taste
2 oz. olive oil

Season scamp filet. Dredge in flour. Place in heated pan with olive oil Cook both sides until golden brown 4-5 minutes on each side. Thickness will determine time. Remove and keep warm. Add wine, lemon juice and butter. Reduce liquid until sauce-like consistency. Add chopped parsley and pour over scamp
