SEARED GROUPER JACK DANIELS

6-8 oz. grouper filet

1 Tbsp. blackening seasoning

1 Tbsp. olive oil

1 Tbsp. Jack Daniels

1 tsp. chopped shallots

3 oz. orange juice

1 Tbsp. whole butter

Chopped parsley for garnish

 

Season grouper with blackening seasoning. Heat sauté pan and add oil. Place grouper in pan skin side up. Cook 3-5 minutes on each side. Remove and keep warm. Add shallots to pan and sauté. Remove pan from burner and add Jack Daniels. Bring back to burner to ignite and burn alcohol off. Add orange juice and butter. Reduce until sauce-like consistency. Place sauce on plate and top with grouper. Garnish with parsley.
