2 cups mascarpone cheese
1 cup heavy cream
½ cup granulated sugar
2 vanilla beans (split in half and seeds scraped out)

Put all ingredients into a mixing bowl and beat with a handheld mixer until mixture is stiff. Place into an airtight storage bag and place into refrigerator overnight. When ready to use, cut small hole in one of the corners of the bag and pipe the mixture out of the hole.
