1 lb. alligator
2 cups buttermilk
3 cups all purpose flour
2 tsp. Old Bay seasoning
Canola oil (1/2 inch in cast iron skillet
Mix of ½ cup mayonnaise, splash of ketchup and a pinch of Old Bay seasoning
Lemon wedges

Cut alligator into bite size pieces. Place saran wrap on top and tenderize with a mallet. Place in buttermilk for about 20 minutes. Dredge in flour mixed with Old Bay seasoning and fry in hot oil for about 4 minutes on each side. Drain on paper towel, then serve with lemon wedge and small dish of sauce.
