Bronzed Chicken Breast With Soy Bacon Caramel Sauce




2 lobes of chicken breast, pounded to ¼ inch thick
3 Tbsp. olive oil
1 Tbsp. each black cocoa powder and brown sugar
1 tsp. each kosher salt, black pepper, ground coriander, paprika
½ pkg. Cloud Nine Chocolates bacon brittle
2 Tbsp. water
¼ cup lite soy sauce
½ cup heavy cream
1 Tbsp. Crystal hot sauce

Preheat oven to 375 degrees. Mix the dry ingredients together. Coat chicken breasts with olive oil. Rub the dry mix evenly on both sides. Place on a sheet pan in the oven for 4 minutes, then turn. Cook 4-6 minutes more. While the breast is cooking, place the brittle, soy, and water in a pan and simmer until brittle is melted.Then reduce by half and add cream. Reduce to sauce consistency and finish with hot sauce.
