2 lbs. chicken, cut into serving pieces
3 dried bay leaves
4 Tbsp. soy sauce
1 red onion, sliced
3 cloves garlic, crushed
1-2 cups water
2 Tbsp. vinegar
¼ cup cooking oil
½ Tbsp. white sugar
Salt and whole peppercorn

In a large container, combine the soy sauce, garlic and onion. Marinate the chicken pieces for at least 1-3 hours. Place the cooking oil in a pan and heat over gas flame. When oil is hot enough, add the marinated chicken. Cook on all sides for about 5 minutes. Add the remaining marinade and water. Bring to a boil. Add the dried bay leaves and peppercorns. Simmer for 30 minutes or until the chicken is tender. Add vinegar; stir and cook for 10 minutes. Add the sugar and salt. Stir and remove from heat. Serve hot.
