In a 14” sauté pan, brown fresh mushrooms in olive oil and butter. Salt and pepper to taste. Set mushroom aside. Add more olive oil and butter to pan. Dredge flattened chicken breast in flour seasoned with salt and pepper. Brown chicken over medium heat on both sides. Remove chicken from pan. Add a little more butter to the pan. Add 1/2-2/3 cup Marsala wine. Add juice of 2 lemons. Reduce heat; add chicken, mushrooms and parsley.
