Cat Mccreery

6 medium cucumbers
3 ripe avocados
2 freshly squeezed lemons
Handful of finely chopped dill
Handful of finely chopped lemon thyme
1 tsp. ground coriander
Pink Himalayan salt and pepper

Blend all ingredients in a food processor or blender. Chill prior to serving. Garnish with a dollop of nonfat Greek yogurt, sprig of dill and Himalayan sea salt.
