½ large onion, chopped
½ bunch green onions, chopped
1 rib of celery, chopped
1 stick butter
4 Tbsp. flour
1 – 12 oz. can evaporated milk
2 egg yolks
1 lb. crabmeat
10 oz. of your favorite cheese
Salt, pepper and seasoning to taste

Saute onions and celery in butter until soft. Add flour and blend well. Add milk and blend well. Remove from heat; add egg yolks, crabmeat, seasoning and some of the cheese. Mix well. Put in a casserole with remaining cheese on top. Bake at 375 degrees for 30 minutes.
