1 Tbsp. large diced of the following
Red pepper
Red onions
Green pepper
Black olives
Roma tomatoes
Green olives

1 Tbsp. olive oil
¼ Tbsp. garlic
1 oz. Chardonnay
1 tsp. oregano
1 tsp. parsley
1 Tbsp. lemon juice
1 oz. dry Vermouth
½ cup chicken stock
½ tsp. basil
1/8 tsp. black, red and white pepper

Saute peppers, onion and tomato for 1 minute. Then add garlic. Saute for 1 minute. Deglaze pan with wine, Vermouth and chicken stock. Add seasonings, spices, herbs and lemon juice. Reduce ingredients to half. Add olives and heat thoroughly.

1 grouper or red snapper filet (8 oz.)
Salt and pepper to taste
1 oz. olive oil

In a skillet, heat 1 Tbsp. olive oil. Season fish and place in pan and cook approximately 2-3 minutes on each side. Place fish on a serving dish and spoon sauce over the top.
