01 Feb Easy Buffalo Chicken Spaghetti Squash
4 chicken breast
1 large spaghetti squash
1/2 cup homemade mayonnaise (or cream cheese if eating dairy)
1/2 cup Franks Red Hot Original
Serve chicken over a bed of spaghetti squash and top with sauce.
Heat oven to 350. Lightly season chicken and bake until cooked to 165 degrees.
Heat oven to 350. Cut squash in half long way and remove seeds. Place flesh side down on lightly oiled baking sheet and bake until the squash is slightly soft to the touch but not browned. You should be able to press on the outside of the squash and it give a little. This may take 30 minutes to 1 hour. Once cooked, remove squash from oven and let cool until cool enough to handle. Using a fork, remove the squash from it’s shell.
If using mayonnaise, mix mayonnaise and Franks together well. If using cream cheese, either let cream cheese sit out until it reaches room temperature and mix with Franks or heat cream cheese over low to medium heat in a sauce pan until soft then whisk in Franks.
