Seasonal Cocktail – Loquat Smash

 

Brew Ha-Ha

 

Loquat 6-8 oz. simple syrup
Fresh mint leaves
1 Lemon
2 oz. pour Bourbon

Put 6-8 loquat into a pot and cover them into water and bring to a boil. Turn to a simmer for 15 minutes to make simple syrup. Take a potato smasher and smash loquat and strain into a glass measuring cup (should have 1/3 cup loquat juice). To make simple syrup add equal part sugar that you have of loquat juice and put back into pan until sugar dissolves. Add ice to the shaker followed by fresh mint leaves (about 3-5 mint leaves depending on size). Squeeze half of lemon into shaker then add bourbon, finally the simple syrup.
